Mommy's Lunch

This is my very most favorite eat-in lunch. It's so easy to throw together, takes about 3 or 4 minutes to assemble (including the side of fruit), and it's super nutritious - perfect for moms!



The Sandwich:
Whole Wheat Bread
Your Favorite Hummus (I use Trader Joe's Cilantro-Jalapeno version)
Leafy Lettuce
English Cucumber Slices (length-wise for less fall-aparty-ness)
Sliced Tomato
Sliced Avocado
Dijon Mustard (If you're a mustard fan - it's also good without)

Slice up some fruit, and there you go. Ready in the time it takes to heat up a Lean Cuisine - and waaaay tastier, too!

  1. that sounds delicious. =) I've made a variation on that before, but without the avacado. I personally love some feta mixed in there too, but if i remember correctly you're sticking to a vegan diet. =)

  4. This is one of my favorite lunches too (I add a sliced hard boiled egg too), especially when I was pregnant with Mason. I ate this 3 times a week!

    1. Have you tried the mediteranean veggie sandwich at Panera? I get it without the feta, and it is sadly lacking in avocado ;-), but the bread they use for it makes it so good.
